India is the world’s biggest consumer of edible oils. So naturally india beomes a hub of Used Cooking Oil generated. Tremendous potential lies in this untapped unorganised market where until recently an organised effort made when government launched its RUCO intiative. RUCO means repurposed used cooking oil. FSSAI is governing body for RUCO initiative.

The cooking oil on repetitive use develops polar compounds which lead to health hazards. This used oil by big businneses involved in fried foods used to discard it to industrial application but mostly it found its ways to edible strams via black market route through small street food vendors compromising the safety. Also it used be drained in environmentally hazardous manner blocking sewerage and drainage systems. so fssai notified the limit of total polar compounds to be not more than 25% beyond which it should be discarded. And a mechanisam to collect the UCO has been devised under RUCO intiative to collect the used cooking oil which is fit for discrdrding.
